400g chopped tomatoes · 1 stock cube · 1 tsp oregano · 200ml water

Done when: thick, rich and well-reduced; it should coat the back of a spoon

Cook the spaghetti
400g spaghetti

Done when: al dente: tender but with a slight bite, usually 1 min less than the pack says. Reserve a mugful of pasta water before draining.
